Barbecue is a part of some states’ cultures as much as their flag and state flower. Although most people think of dripping sauce getting caramelized onto meat when they think of barbecue, Tennessee isn’t afraid to do things a little differently. Memphis barbecue is known for its dry rubs. With mixes that contain anywhere from thirty to forty spices, these dry rubs kick up the flavor and make everything from ribs to chicken so mouthwateringly that you won’t miss the sauce. You know I love a cheeky meal out, so I thought I would look at what food I might try if I ventured to Memphis.
